Celebrate summer with the a delightful variety of dishes, starting with a Seafood Station featuring poached prawns, smoked salmon, seared tuna, and a pickled mussels, tomato, and celery salad. For antipasto, enjoy seasonal bruschetta, a selection of sliced cured meats, marinated olives, roasted red peppers, and marinated artichokes, accompanied by Massimo Bocconcini and cheese, plus freshly baked bread.
The Carvery includes Big Glory Bay salmon with a chili, fennel, and green tomato dressing, roasted whole sirloins, and crispy roast pork belly. Roasted Vegetables such as duck fat potatoes, corn on the cob, baby carrots, and fennel with lemon thyme complement the mains.
For Seasonal Salads, there's a range including heirloom tomato and watermelon, peach and mozzarella, potato salad with mustard seeds, and a Bivacco Caesar salad.
Enjoy a delicious Woodfired Seasonal Pizza and indulge in the Pasta Wheel featuring Pipe Rigate alla Vodka served from an aged Parmesan wheel.
For Dessert, the buffet offers a selection of summer trifles, tiramisu, carrot cake, vegan brownies, pavlova with vanilla mascarpone and berries, seasonal fruits, cookies, shortbread, and a Bivacco chocolate fountain with fresh fruit and marshmallows. For a refreshing finish, enjoy shaved Italian ice topped with fruit syrups.
